Shank You Fall Recipe

Risotto Ingredients:

  • 11/2 C arborio rice
  • Spanish onion small diced
  • 1 Small sugar or reg pumpkin peeled seeded and diced 1/2
  • 2 T Olive oil
  • 4 T Butter
  • 5 Cups chicken stock (approx.)
  • 3 T Brown sugar
  • 1/4 t Allspice
  • Salt/Pepper

Instructions:

  1. Toss diced pumpkin with the brown sugar salt and pepper.
  2. Place on greased sheet pan in preheated 350 degree oven until lightly browned and caramelized.
  3. Set aside 3/4 Cup and puree 1/2 in food processor or blender.
  4. Wilt the onion in the butter and oil, add the rice and stir until parched.
  5. Add the wine and stir until almost absorbed.
  6. Begin adding simmering stock, stirring, cooking until just before al dente.
  7. Add the puree and diced pumpkin, stir gently, add the allspice and season with the salt and pepper. Spread on sheet pan to cool.

Shank Ingredients:

  • 4 Bone in pork shanks (approx. 11/2 each)
  • 11/2 Cups flour seasoned with salt and pepper
  • 3/4 Cup olive oil
  • 2 T tomato paste
  • 3 Carrots 1/2″ diced
  • 2 Celery ribs diced
  • 1 Spanish onion diced
  • 2 Cups dry white wine
  • 10 Cups chicken stock (approx.)
  • 1/4 t dried rosemary crushed
  • 1/4 t dried thyme
  • 1 Turnip diced 1/2″
  • 1/2 Butternut squash peeled, diced
  • 1 Carrot diced
  • 1 T grated lemon peel, chopped parsley and rosemary for garnish
  • 1/2 Cup toasted pepitas

Instructions:

  1. Toss the shanks with the seasoned flour until well coated.
  2. In a heavy pot with a tight fitting lid, heat the oil until simmering, add the shanks and brown on all sides.
  3. Remove and add the diced carrot/onion/celery. Stir fry one minute, add the tomato paste and cook over medium high heat until caramelized and browned.
  4. Deglaze with the wine, add the dried herbs, and cook for about 5 minutes.
  5. Add the stock and bring to a simmer, season.
  6. Place the shanks into the pot so liquid and vegetable mix comes up 3/4 the way up on shanks – add stock if necessary. Cover with lid or foil if using pan.
  7. Place in 350 degree oven for approx. 2 hours or until very tender.
  8. Remove shanks and skim fat and bring to a boil. Simmer until lightly thickened and add turnip/butternut/carrot.
  9. Toast pepitas lightly in a pan and set aside. Add simmering stock to risotto, stirring until creamy.
  10. When vegetables are just al dente, add in sauce when you are ready to serve.
  11. Place risotto in middle of plate and top with a shank. Surround the rice with the the sauce and vegetable mix, drizzling some on the top.
  12. Scatter the toasted pepitas and top the bone with the gremolata of rosemary, parsley and lemon peel.

Or just brunch animals who can’t get enough of it.

Which is why the Revival crew knows you’re gonna love this funfair. Because it’s not only Halloween, it also happens to be our anniversary and team birthdays all in one. So we’re celebrating Stranger Things style complete with Eggos, wrist-rockets, and a special anniversary brew we brought back from the Upside Down. You’ll just have to wait and see what it is. 

If that doesn’t make you OMG, then “turn around.” We’ll have DJ Chris Steele spinning all the 80’s hits. Then The Carson Daily will be playing 00’s pop-punk, alt-rock, and of course 80’s classics. So good, you’ll scream like when Bastian rode Falcor for the first time. 

We’ll also be releasing our second batch of RAD – Strawberry and Chocolate Milkshake Stout. This batch promises to be more milkshaky than Nesquik could ever make. It all goes down Friday, October 25th starting at 5 PM. Costumes not required, but strongly encouraged. And if you come dressed as a Demogorgon, well, then you know what happens. 

Remember, you can’t spell “Birthday” without “R-A-D”.

Sink your teeth into freshness

You are cordially invited to our darkest release party. Help us conjure up all the deadliest spirits in our big house to celebrate the release of Mercy Brown tonight starting at 5 PM.

Bram Stoker’s Dracula will be on the big screen and the newest batch of Mercy Brown will be flowing on draft and in tallboys. DJ Chris Steele will be spinning your favorite, sad music. Bring us your best goth and get a little dose of the vampire brew on us. 

Behind the Chestnut Hill Church in Exeter, RI, lies the grave of New England’s most famous vampire, Mercy Brown. In order to satisfy her thirst, we brewed this Imperial Brown Ale, offering rich warm malt notes to awaken the senses (though perhaps not the dead). Dried plus, toasted malts, and dark caramel tones finish with a spicy herbal hop flavor.

As mythology states, vampires are repelled by sunlight, garlic, and one-word text messages that end with a period.

The Naya Rockers play a fiery blend of reggae, dub, and soul fiercer than any band this side of Kingston, Jamaica. Can’t wait to have them perform in our Patio Series live on Thursday, September 26th at 8 PM.

Leader Nathan Sabanagayam is at the center of the East Coast reggae scene so at any performance you can expect to see and hear players that are fundamental to soul/reggae/R&B music in New England.  

Together and individually, Naya Rockers have backed and shared the stage with reggae legends including: Toots Hibbert, Third World, Burning Spear, Ken Boothe, Barrington Levy, Derrick Morgan, Kiddus I, Bob Andy, The Congos, and more.

Dion Knibb had opportunities to perform ska music with his father Lloyd, the drummer for the legendary Skatalites, so it isn’t surprising that he followed in his father’s footsteps and became a ska musician in his own right, although he elected to step out front and handle vocals instead. Next Tuesday, September 24th we’re launching this year’s batch of Helena in 4-pack tallboys and on draft. We’ll be partnering with our friends at Fatface for a Stein Hoisting competition with swag prizes from both Fatface and Revival. The kitchen will be crafting some German food specials for the night and we’ll also have Helena pitcher specials to wash it down. 

We brewed under the pale moonlight our lovely Helena, a traditional German-style Oktoberfest Lager. This namesake potion was brewed with 7 different malts from the western lands and finished with kettle hops to give it a floral, citrus, herbal taste. Amber and gold color, smooth, beautiful as the skies of Venus, soft maltiness, full of curiosity, toil, and trouble. One sip and you’ll follow her forever.

Grapes from Carolyn’s Sakonnet Vineyard Farm were used in collaboration with champagne yeast to create Rosé IPA. A dry, wicked aromatic, slightly hazy, yet bright ale. The hops shine, the taste is killer, this brew is a fairy tale come true. 

One sip of each and you’ll follow them forever.

Weekend’s are a great time to get away.

Unless it begins on Friday the 13th.

Jason’s back in a new dimension of terror. We’re showing Friday the 13th Part 3 in 3D on Friday the 13th this month. Showings at 8 and it’s all thanks to our friends at PVD Horror. It’s the retro 3D so you can bring one of those old paper glasses if you have some or reserve one of ours here. Entrance is free but a donation to the Providence Animal Rescue League is encouraged. And we teamed up with local artists to provide raffle prizes with all raffle ticket proceeds going straight to charity.

If comedy is more your thing, then you won’t want to miss Dr. Westchesterson with DJ Hotmess on Saturday the 14th at 9. His live set is part comedy, part hip hop, and all ill beats with the dopest rhymes you’ve ever heard. Check out his latest interview in What’s Up RI here

We’re celebrating football season in the best way. Tailgating all day. You bring your favorite tailgating chair, face paint, jersey, and we’ll do all the cooking and cold beer pouring with the games on all of our TVs including the biggest screen in Cranston. The kitchen will be whipping up football food specials and our coolers will keep your beer cold longer than any Yeti ever could.

We’ll be raffling off Pats tix for the game against the Bills on 12/22. You can enter at any of our tailgating events this season. Drawing on 12/8. No purchase necessary and limit one entry per person.We’ll also be giving out other prizes each night for the best tailgating get-up. Shark Week at Revival in 2019

Despite what Hollywood has led the public to believe, sharks are quite harmless, mostly, and a vital part of our earth’s ecosystem. Anyone that’s watched Shark Week knows this. In fact, the best week of the summer kicks off this Sunday, July 28th, and we have a fintastic week planned here at Revival. We’ll have Shark Week on all TVs, show JAWS and other shark movies, food and beer specials, and other shark-themed activities all week. Stop in for cold HAMR, see some sharks, and maybe you won’t be as afraid of going in the ocean this season.

Dedicated to 94HJY’s mid-day rock goddess: Jenn’s 2019 limited batch is now available in 4packs at the brewery. This sweet stout conjures chocolate and coffee tones and is stone cold delicious. Roasted malt and moderate hop flavor lurking in a tall glass of this black magic woman. It’s a brewed to raise hell with a taste that slays.
